meat bird breeds best age to process

Hi... I got jersey giants (chicks) and find even though big .....are not good for frying or roasting? or has anyone tried?

What breeds (other than corning rock which die to easy) are good for all purpose? I have the following almost roosters

Barred Rock
EE
RIR
Leghorns (they will be spared but what do I do with the roosters?)
Marens
Black Giants

What is best to do with each breed and when to process? What other breeds are good for all purpose eating?

Does anyone have a bred or cross that you can sell eggs that will produce GOOD big meat?
