So I'm butchering another round of cornish, my first hen. I've never seen this before in any other bird I've harvested. Albeit, I'm not really experienced, this is my second year I've done a total of 8 or so birds. The tenderloins on this one looks like it's cooked...
I left her out to drain for about 5 minutes, yes i know too longer then you need to, but I've never seen the meat look white/ grey and flaky. No bad smell, no strange texture or slime. What's happened? Any ideas?
