Meat Ducks... They are here.... pics added.

Commercial producers slaughter ducks (these are their proprietary Pekins) at seven weeks two days of age. Notice that in the store there is almost no size variation in what is offered.
It is a feather thing- this seems to be the very best moment to process them to get a clean carcase without much trouble. I understand that the producer is docked for undersized birds.

JM's birds were good? Did you keep any back for breeders? I'm interested in getting some but man they are expensive. $6.00 / duck or something like that? Plus it has to be express mail which is insane too. At least they are honest, as there must be an issue with shipping them priority. Muscovies must be more fragile than other ducks when it comes to shipping.

Glad to hear the taste was worth it. I'm excited to try them.

I will keep an update on these scrambled ducklings when I get them. They should be here Thursday for Friday.

I've heard about processing at exactly a certain age so the feathers are easier to pluck. That's interesting, I wonder if they are all like that or just the commercial pekins.

Well I'm getting the pekins too... the first lady I talked to from Ideal a few days ago was a ditz.... LOL... the second lady I talked to was really helpful, and she told me that they had plenty of pekins left and that If I wanted some she would put them in for me... Great... so no we have 40 pekins and 120 assorted.

Keep you updated they should be here Friday.

Glad you got your pekins. They are some of the biggest ducks (especially my drake) that I have ever had and they grow so fast. I think you will be pleased with them.

I can't wait to get my ducks later this month. I was excited to get these and have my own supply of duck meat but now I am even more excited about rendering the fat and cooking with it.

I've only eaten 2 ducks in my life and they were from Giant Eagle a couple years ago. The meat is Delicious!!! it was very greasy and fatty.....doesn't all that greasy fat make it very unhealthy for you? Or maybe I just got some not so good ones?

Generally animal fat is not good for you but there are ways to cook duck to make it less fatty. They involve cooking it more slowly over a longer period of time and allowing the duck fat to drip into a pan without also sitting in that same pan.
