In my experience with my flock they will eat just about anything. So yes, feeding chickens meat will give them extra vitamins/minerals. I believe when it comes to portion just use your fair judgement. They will eat what they want, no more,no less.

WARNING: Feeding chickens meat will take away their organic status.
WARNING: DO NOT FEED THEM RAW MEAT!!

Why would meat make them non organic? Supposing, of course, the meat is organic.

Am I supposed to cook thier beetles and worms and all the other living creatures they eat?
