are they any difference in the texture and quality of meat roosters compaired to hens if both came from the same flock,same age,processed the same way?

Not really, hens may be a bit more tender but that is an opinion. Especially if they are only 8 weeks old. It would matter a bit more if they were around 1-2 years old.
