I used to have family in Midland... are there any meat processors near you? I just call a week ahead and they have it ready for me. I order around 30 lbs, and freeze it. When I am ready to make lard, I thaw it slightly, and cube it up. I bag up what won't fit in my dutch oven and stick it back in the freezer for next time. It is so simple as long as you take your time and keep your temp. low.
