I hear ya. I really want to get some Nubians, but with having babies of my own at this time of life, now is not a good time for me to commit to a couple goats. I don't have anyone who could sub for me anyway.

Have you thought of just buying milk from someone else and going ahead making cheese, etc. that way? Then you can get proficient at it without the commitment of your own animals. I think that's what I am going to do, just learning and starting out, until I have more of my time back to myself to get into raising dairy goats. Heck, maybe by then I'll even have enough land to just get a cow!
