Milking Goat owners making cheese?

I know people who are doing it and it's delicious. After moving away from the big city, I missed getting great goat cheeses from Europe. Then I finally met some people doing it locally, under the radar. We barter for it.

A few comments:

1) Because of CAE, almost all goat owners milk and pasteurize their doe's milk anyhow before bottle feeding the babies, so it's not large step to move on to cheese making.

2) We don't have enough goats to justify doing it ourselves (yet) and intend to use the goat milk to supplement our pig's feed.

I think in general goat cheese, being soft, is pretty easy to make.
