Miss_Jayne, pass me a bagel!(update pg 2 easier recipe!)

miss_jayne, jen4 or anyone........
What method of shaping works best?
I used the poke in the middle method, but didn't get much of a center opening. They were fine, but just wondering.

jen4, which method did you use in the photo?

Blueberry sounds good. But, would you use fresh blueberries? I wonder if dried would work better.

do the rolled method. so much better!

i would use dried blueberries. too much liquid in the fresh. maybe cook the dried berries to plump and use some of the reserved liquid in place of a little water.

Would bread machine yeast work for the 2nd recipe? It is a Quick-rise yeast. I am going to make these today. Little DS ate the last bagel yesterday and I didn't want to run to the grocery store for more.

Thanks!

give it a whirl. the worst that could happen is they are a little flat or too puffy. but they will still be bagels!

They all look so yummy everyone! Man this site is so bad for my waistline! But I have to try these next. So the second recipe is the easiest? How would you do the onion, just chop fine and sprinkle? My DD loves onion bagels. Anyone know how bad these really are for ya?

Ohhh, that reminded me of my other question. I have whole wheat flour. Should I just do half wheat, half bread flour, or all wheat flour? I made all wheat egg noodles one time and ewwwwwwwwwwwwwwwwwwwwwwwwwwwwwwwwwwwww. They were so dense and kinda gritty. The wheat flour has sit untouched since!

the second, definitely.

i would do just what you said for onion, except, put the fine onions on a plate and dip the wet bagel onto the onions that way you don't waste any or have a mess. give it a try and see how it goes.

Should I just do half wheat, half bread flour, or all wheat flour?

i would start out with one cup wheat only. wheat is super heavy. then move up if the recipe seems stable.

i'll try not to sabotage any more diets!

I made my first batch of bagels yesterday using the 2nd recipe. They didnt come out all nicely browned and pretty like yours did! They only browned where they came in contact with the baking sheet. How did you do that? I did 20 min @425 degrees, turning once after 10 minutes. They were good anyways and the kids loved them! Thanks for the recipe!
