Oh, my, this is all so timely. Tomorrow I will help my neighbor butcher my beautiful four KC drakes. This is new to me, but I decided that if I want to raise ducks and have eggs, I just have to accept the whole process. No one wants those extra drakes. When I added up how much I had spent on organic feed, bedding, etc. and then called the store to see what they sell duck for, I felt I simply cannot afford to just give away good food. So, I do so much appreciate your ideas on how best to enjoy this special treat. I wondered whether it would be easier to just skin them, but now you tell me how delicious that crispy skin is. I never would have thought about saving the rendered fat to cook with. Thank you all.

By the way, have you ever saved the feathers and down?
