Do guinea keets eat mosquitoes? I only ask because in our coup there are extremely small spaces between the slats of wood on the sides. They are not large enough for any predator to reach a paw into but they are still big enough for a mosquito. So should I leave it be or buy some mosquito netting and place it around the outside?

because it is so true they will eat anything and everything

I've never had an issue with mosquitos biting my Guineas, not the cooped flocks or the free range flock. My young keets jump up and grab any flying bug that's attracted to their brooder lamp that they can catch, mosquitos included. Personally I wouldn't waste the time/effort to put up the mosquito netting unless you see that the birds have bites on their heads and neck areas.
