I'm a big fan of Speckled Sussex also. Gorgeous colors, good layers, mellow temperament & easily tamed. Great all around bird.

My leghorns are surprisingly mellow, my sister's leghorns are bat crap crazy though. Mine have to be on top of my list of favorite breeds they are pretty and lay like machines.

Minorcas are a fairly docile breed. Much more than any of their other Mediterranean class cousins anyhow. Also Hamburgs aren't to bad and my Spitzhaubens are very docile.

Houdan, Sultan, white crested black Polish, Barred Hollands are a few good ones. Dorkings lay off white to pale tan eggs and are as docile and sweet as anyone could want.
