Okay, so when our Blue Slate Tom breed our Royal Palm hen it is an actual breed? I thought the two boys I have were just mutts. I have a self blue, a slate blue, a black and their sister to breed them to. Which would be best, or none?

Well, that argument is that take the size differential between Midget Whites and Bourbon Reds. Some argue that that in itself should be enough to call it different breeds. Others argue that other than that and color, they are the same (snoods, wattles etc) and should be the same breed, just different varieties.
 
As per the APA

Breed: An established group of individuals possessing similar characteristics, and when mated together produce offspring with those same characteristics. A breed may include a number of varieties of the same general weight, distinguished by different color plumage. Then it goes on to combs but that doesn't apply to turkeys

Variety: A sub-division of a breed. Differentiating characteristics include plumage color, comb type or presence of beards and muffs.

The way I read it the breed is Turkey

the variety, Midget, Bourbon etc
