I read on the internet that when you move chickens from one coop to another that they needed to reestablish in their minds, where the new home was. I read that I should lock them in the new coop for a week before even letting them into the run (which is connected to the coop). Is this correct? I feel bad keeping them cooped up all day.

You can let them in the pen, that won't make a difference in anything. If they free range, they'll end up in their old coop. Give them a week in the coop/pen and they should get the idea.
