Good afternoon,
My daughter just bought me a single muscovy duck. We have had ducks before. Khaki Campbell's which we raised from chicks so this is the first time getting a grown duck. She seems very skittish and panics every time we approach her in her pen. At the moment we are keeping her in a large dog pen. She doesn't want to eat the chicken feed we had for our chickens. Any ideas on reducing the panic? We have had her just over a week.

Where did she get the Muscovy duck from? I am not sure what you could do to reduce panic. Maybe try to sit in there and let him calm down and get used to you? In my experience Muscovy ducks are very calm and easy to tame, I never had one that would refuse to eat though. I usually would just sit by them while they ate and get as close as I could without spooking them, then I would start feeding them by hand and giving them treats. It takes me like a week or two to turn them into nice little pets. Problem is, yours isn't even eating.
Where do you live? Muscovy ducks have feral breeding populations in several southern states, is it possible she was taken from the wild? This would explain why she does not want the chicken food. Maybe try getting her a buddy who was raised in captivity and can teach her what the food is. If you did take her from the wild you can no longer legally release her, it is against the law to release exotic pets into the environment in the US.

If she knows where the food is, she will eat eventually. Maybe have a couple of dishes out so that she can choose what to eat from. Add some mealworms or something she might be familiar with - peas, watermelon, etc...
I like to crouch down in the duck pen or the yard and my muscovies come right to me. I raised them from ducklings though. They are more skiddish at certain ages. How old is she?
Also, it would be best for her to have another Muscovy as ducks are flock animals and muscovies have a different language than other mallard derived ducks.
