My chicken has been drinking a lot of water for two days, constantly drinking water and has watery green poop, why?

Well, how old is she? If you’re getting a heat wave, that might be normal. Chickens get hot - chickens drink - it comes out in their poop, which would be nothing to worry about. The green could come from her eating grasses. Does she have any other symptoms?
