This guy (Stu the Roo) will be the first chicken I will have ever processed. Happens tomorrow morning. He’s fasting now before he goes in for the procedure. I have the necessary items clean and ready. I told my sister I wonder how many times I’m going to throw up. 
I’ve never done anything like this before. My biology class in high school was probably one of the few that didn’t dissect a frog or a cat. I’ve watched a lot of chicken processing videos.
Since I’ve only ever had store-bought chicken, which I know is Cornish cross, I’ll finally get to find out what a different breed tastes like. I don’t know if there’s much difference at all. It’s a Wyandotte.
