I hope I'm posting this in the right area...

Is there a way to tell if a Hen is laying eggs? Can I just look at her and tell, are there any outside signs?

Not really. If you're talking new pullets, their combs will turn a bright red and they will start squatting as they reach sexual maturity, but you generally have to find an egg to be sure.
