My leukemia's back.

Sometimes I do wonder why we meet the people we do in our lives at a particular moment or how groups of people just "find" each other. Curious thing, I don't think it's all coincidence, I think there are reasons for it.

I just know I'm really glad to have stumbled into all you guys when I did, no matter what the reason might be.

NFC - read and heed my signature - "There are no coincidences - only providences." I truly believe this. In times of need the right person/situation has presented itself for me. I have some very good 'angels', and trust me there have been times when I have kept them very busy.

Echo and I culled two more cockerels today. This kid fits right into our home and lifestyle, let me tell you!

One of the birds was an Ameraucana x Dark Cornish. I was really disappointed when we got a good look at the carcass. He's from mid June, the oldest batch I have, and I was thinking the DC blood would help them be heavier, with a little more breast meat. I didn't weigh them, but he looks smaller than the Ameraucana x EE, and not near as much breast. The cavity was so narrow Echo could hardly get his hand inside to gut the bird. The two birds will make a decent meal for us, and I've got stock going from the backbones and wing tips. I guess as long as I'm home and my time isn't much of a factor processing these guys isn't too bad, but if I were working or really needed the meat I'd sure be looking at some nice piggy Cornish cross

Is the flavor worth it?
When I had poultry science, we had to process a bird and then the following Saturday we all showed up at the poultry department and grilled them.
To this day, it was the best chicken that I have ever had.
I bet it would make wonderful stock, and if the birds seem too small to bother, you could just skin it couldn't you?

I bought the dual purpose chicks thinking that I could process any oopsie roosters and make stock from the old hens... but, I should have known I'd have a bunch of geriatric pet birds running around.
I don't do self sufficient well.
I even have problems with carrots sometimes.
I mean what if they can have some sort of cellular feeling and I skin them alive and then run them trough the juicer?
It doesn't keep me up at night... but if I am awake anyway, it sometimes gets more thought than it deserves.

The flavor of the first bird was very good, and it was moist and tender. I'm going to rest and brine these the same way, they'll be cooked different but hopefully still good.

Tasted the broth this am, it's wonderful. I've found I really don't use that much broth/stock, I've just now finished up what I'd canned a few years ago. I'm going with a more concentrated batch for increased flavor. Can broth get too strong? IDK.
 
I am a huge soup person... no wait. Odd visual- I am a person who makes a huge amount of soup.
I hate buying stock but I don't always have stock making things available when I need to make soup.
I pressure can a lot, but I have always been reluctant to can stock and meat.
I suppose if the beans and mushrooms have not killed us yet, I must be doing it correctly enough.
I freeze stock when I have extra, but then I forget about it until it is time to clean out the freezer.

I should buy roasters when they are on sale and make my own... or move closer to you and swap stuff out.
Actually I am getting so weary of Florida I might.
 
Yeah, like up here, where men are men and women are grateful? Where ranch is a way of life and not a dressing? Where "Welcome to Cowley" and "Now leaving Cowley" are painted on the same side of the sign? Where the elevation numbers are higher than the population numbers? Where fast food is an antelope running beside the highway?
