my pekin and welsummers

My pekin Daphne has made herself a nest next to my chicken coop and has started to sit on her eggs. I only have her and my Rouen. I know that the pekins are known to loose interest with sitting on their nest but everytime I walk by or in the chicken coop she gets very protective and will quack at me unless I put my hand out and tell her she's fine then she will quiet back down. Is there a possibility that she will hatch her eggs herself? Also I'm a first timer with chickens. We got a dozen welsummers at our local farm store. We have 5 roos and the rest hens. I know we have to get rid of most of our roos but not all our chickens are mature yet. I have one roo who has been trying to mate with the hens so should I keep him or wait till they all mature??

On your chicken flock I would wait until the Roos are mature and then pick the personality and colors you want in your flock.
 
The roo that has been mating is very protective of the whole flock he has tried to attack me for picking up some of our hens when I was checking their pelvic bones to see if they are going to be laying soon. Is this a good thing?
