My Roos comb is turning grey?

I believe he's healthy from what I know, but that's frostbite for sure. 7 birds is enough for them to keep each other warm enough as well. You can try putting bag balm on it, but it's not cold enough for any of his comb to fall off or anything. If it makes you feel more comfortable, you can put the heat lamp back on them, but it's not necessarily needed.
 
How cold is it in their coop at night?
That is a good possibility if it is in the 30's or colder. To help you can put bag balm or vaseline on it, though I haven't personally tried it to see if it helps.
Sometimes if they don't have enough water their combs and face could turn grey/purple. Do you have any other chickens with this, and do they have any other symptoms?
The other hens seem fine so far, they have been going through their water pretty fast but when they deplete it I wouldn't say that they are without water for more than a few hours because I'm home and in isolation so I check on them frequently, especially since we've only had them for a couple of weeks

Okay, can you tell me from your experience at what temperature it would be safe to stop using the lamp?

They can handle cold temps like in the 20's (Fahrenheit) without a heat lamp, but when it gets any colder than that I like to put one on mine. Anything above is usually okay, as long as it isn't drafty and they have enough ventilation-which it sounds like you have that covered. But when it gets cold my chickens take care of themselves and they stuff themselves 2-3 to a nest, sometimes up to 4! And they aren't THAT big of nests. But for a comfortable temp, I'd say if it gets to anything in the 20's or less you can put one on them, but otherwise you're good. You can if you want, but it's not mandatory.
