My rooster is being angsty

Your rooster has gone through puberty and is now a young man whose main job is to protect his hen or hens.
He is programmed to dominate everything and anything basically. What he cannot boss around, he attacks until it submits or flees or dies. It is absolutely natural behaviour and unfortunately a mature rooster is very unlikely to ever again be a 'love bug' like he may have been as a young cockerel.

However it is possible for people to establish a relationship with a cockerel where he learns to respect you as his superior. Large flocks of chickens will naturally contain more than one rooster and there is always a top rooster and then subordinates, so a rooster's instincts include the possibility of having to settle for not being the top roo. It is therefore possible to train him into realising you are his superior.

There are many articles and discussions about how to train your cockerel. Once he sees you as his superior he should not attack you and instead keep a respectful distance from you.
 
Back in December I had a cockerel (representing a fighting chicken breed). Being atypical for the breed, he has genetic propensity for attacking humans. To work issue out I spent more time with him and avoided actions that he might interpret as aggression or retreat. Then I penned him on a work bench and stayed with him for an hour or so each day as organizing materials for chicken keeping this coming season. I even gave him some treats taking care not to do so if he was acting unpleasant. Objective was to get him to relax. He is much better know even with a hen in with him.
 
There are many ways to 'train' a cockerel/rooster to accept that you'll handle him and provide feed for his hens. Most of them take a lot of time and patience and of course a confident approach.
The easiest thing is to just accept he's not that cuddly little rooster he was and avoid him.
Don't try to pick him or his hen up; put their feed down and back away.
You may just find as he grows up and no longer sees you as a threat to his hen, or himself he'll become more approachable.
