I also live in Texas, not quite so close to the coast.
On turning those babies out, make a makeshift smaller pen off of their coop, and work on calling them back to the coop with some scratch. I say HEERRREEE, chick, chick. Then after a week or so, let them out to the yard about 45 minutes before sundown. Call them back in and close them up at dark. Gradually let them out a little sooner .
Mine have about an acre fenced, and they don't leave the yard.
