How do you make your orange sauce.....or is it a trade secret?
food is to share. Duck sauce recipe is as follows.
-Saute mushrooms in oil(if button slice them, I'll be looking for buntakai at the store today)
-add your red wine(choose a wine to complement the citrus) chopped thyme(looks for lemon thyme for an extra boost) and a few slices of citrus and let reduce for a bit.
-add straight butter(unsalted) melt and reduce
-add au jus and reduce a bit more
-remove a small portion of liquid to a separate bowl and add pinches cornstarch working until you get a slurry
- return mixture to pan wisk on high heat for a few minutes, consistency of liquid should resemble a heavy stew.
If Im not busy putting it together at work I'll try and get some pictures of the process.

I made some from orange flesh left over from making candied orange peel,
it was pretty rough but very flavorful . Pureed the flesh and cooked down with almost equal amount of sugar.
Played with it for various applications...adding some butter to cut acidity.

dark and earthy with orange notes. Not meant to be a "citrus sauce" will pair well with the salad. I remember making candied orange peels with my mom, might have to give it a try myself, still need to get around to making the butter. Maybe tomorrow. Never enough hours in the day.
 
I have a quick question.. I was walking my front yard and found what appears to be two very large Rosemary plants. I smelled it and it smells like Rosemary. All all varieties edible? Can I cook with them? Let me know if you want me to take pictures. Please.

pictures yes please, there are some ornamental strains but I'm certain you can cook with all of them.
 
Trying to emulate the sauce on an orange chicken dish at local asian bistro.
....very orangy with spicy dried red pepper and some scallions...
....but how to cut the acidity? Butter seemed to help, but maybe some else?
there's alot less orange in the sauce for orange chicken than you'd think. Vinegar soy water lemon juice brown sugar just to name a few.
