Necks and organs

I don't sell mine, Kurtis but I do keep all those pieces and parts. Some for me and some for my dogs. You can't have dressing or giblet gravy if you don't have things to make giblets out of.
 
back when, chickens used to be sold feet and head on and guts in..

after you bought it, the butcher removed anything that you didn't want to take home with you..

I would not sell chickens by the pound in the first place.. not as a backyard processor.. and I would have the people decide what parts they would or would not want.., ,before I started chopping heads......
 
When we do rounds of meat birds we take deposits and I find about half want the necks and organs. The rest we use ourselves or the dogs get treats. Chicken feet make fantastic soup stock!!!!!!!!!!!!

I can't bring myself to see anything wasted.
 
The Amish lady gives me a choice, its an additional 75 cents for innerds returned, so I let her keep them, I dont know if she keeps them or just disposes of them. If I find that I want some I can get them by the quart from the grocery store.
