If anyone has come across any good plans let me know! Preferably something easyish, for the part time DIYer rather than the professional carpenter.

Look for 'shed' plans rather than 'coop' plans, will show you how to frame a basic building.
Add larger overhangs to roof for open soffit ventilation and to help protect summer ventilation from rain infiltration...and top hinged windows for same.
