Need Broccoli Recipes Please

Recipe from my co-worker, she says it's Wonderful!! Haven't tried it yet!


Broccoli Casserole

2pkgs chopped broccoli (fresh or frozen)
1can cream of mushroom soup
1C grated cheddar cheese
2 eggs slightly beaten
1C real mayo
2T grated onion
salt and pepper to taste
Cheez-it crackers crushed

Thaw frozen broccoli, drain or if using fresh then boil the broccoli for 5-8minutes then drain. Mix remaining ingredients except broccoli and crackers. Fold in broccoli. Top with crushed crackers.
Bake uncovered at 350 for 45-50 minutes.
 
broccoli casserole is always requested for me to bring at all get-togethers . it's gooood!!!
Trust me, make it and take it .... they will want it everytime.

BROCCOLI CASSEROLE

1 - regular size bag of frozen broccoli
1/2 - tsp. salt
1- can cream of celery soup
8 oz. - sour cream
1/2 - stick of butter (4 Tbsp)
5 oz- velvetta cheese, cubed
1/4 - C. fine chopped onion ( yes, use the onion )

TOPPING:
1 - tube ritz crackers - crushed ( I have used toasted sourdough bread crumbles too, with just as fantastic results)
5 - Tbsp. melted butter

Prehat oven to 375.
Cook broccoli and drain till all the water is gone, I pat it dry with paper towels or clean hand towel. Place broccoli in a lightly greased 9x13 casserole dish, then sprinkle the broccoli with the salt. Chop your onion and add to the broccoli mixing well. Next in a medium pan melt 1/2 stick butter over low heat, add the cheese and stir till cheese melts (careful not to burn it), add in the soup and sour cream and mix well. Then pour the cheese mix in with the broccoli and mix well. Last crush your crackers and place them in a medium bowl or baggie and pour the 5 - tbsp. of melted butter on them and mix well coating the crumbles. Then sprinkle the crackers on top of the broccoli mix. Place in oven till golden bubbly.

You can't stop eatin' it..... Enjoy!!!
