Fruitcake cookies (drops)
l 1/2 cups golden raisins
1/2 cup bourbon
3/4 cup all purpose flour
1/4 cup packed light brown sugar
2 Tbs. butter or margarine softened
1 egg
3/4 tsp baking soda
3/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground cloves
2 C pecans chopped
1 1/2 cups candied cherries halved
1/2 cup candied lemon peel diced
1 egg yolk
Early in Day:
In medium bowl, stir raisins and bourbon until mixed; set aside for l hr.
Preheat oven to 325 F Grease cookie sheets, into large bowl, measure flour and next 7 ingredients. Mix well. with spatula stir in raisin mix, nuts and candied fruits. Drop mix by tablespoons, about 1 inch apart.
In cup, beat egg yolk with 1 tsp water, brush on each cookie. Bake about 15 min or until firm. Remove to wire racks to cool.
For brandied cookies, substitute brandy for bourbon. ( I have used rum flavoring+water, but they aren't as good)
Also we don't care for the lemon peel so I sub. candied pineapple and add 1tbs lemon flavoring.
for the soak..I take a triple layer of cheesecloth soak in 1/4 cup of apricot/peach brandy , squeeze
out excess and lay over the top of cookies in the storage container. When I package to give away, I remove the cloth..lol..Some people don't like the idea of the alcohol being used and then I sub. rum flavoring.
