Need help IDing a predator that took full grown broiler rooster and hen

In the early morning, after 1 am, something got two of my big, over 15lb broilers. Following a trail of feathers I can see that whatever took them dragged them off their roost (Only maybe 3ft off the ground) and carried them 500 ft. to a ditch on our property. Then they ate them, eating everything, bones and all, leaving only a gizzard, a heart, and lots of feathers/skin. One of our other broilers apparently got away, as she has bite or claw marks on the back of her neck, not very deeply luckily.
Two young chickens got taken three days ago but I thought I had already caught the culprit, a possum, and dispatched him. However, it would have to be something bigger than a possum to take a broiler rooster right? He was so big and heavy that I had to carry him with both arms.
They were our pet broilers let out to pasture with our freerangers after winning us $500 at a livestock show last year, and were so very sweet. They did have health issues and lived long lives for broilers so I'm not too upset, I just want to make sure my layer hens and remaining broiler will be safe.

I live in Southwestern Louisiana.
There's a skunk around here that my dad thinks is the culprit but I seriously doubt a skunk is capable of harming a full grown bird. Not a skunk right?
 
The layers roost in our barn's rafters maybe 12ft off the ground but our broilers and silkies can't fly so they sleep on a lower shelf in the barn, 3 ft off the ground. Last nights stake-out was a bust. We caught a possum prowling around but he was really just a baby.

I've started putting them to bed up higher though, on a railing 6ft up and our donkey gets locked in with them at night. Our barn door though is weird, it has a foot tall gap on top and bottom so I wouldn't call it secure.
