Need Help With Cooking Tilapia

So...I'm cooking fish for the first time in the oven.

Thing is, I have no idea what I'm doing. I've "breaded" the fish with some italian crumbs and an egg mixed together...pretty much the breading is laying on top of the fish waiting to be absorbed when it gets cooked.

Can someone tell me how long and at what degree to put the tilapia into the oven?

(It's just 4 fillets, so nothing too fancy.)

Here is my best recipe for Tilapia with lemon capers

4 Tilapia Fillets (fresh if you can get it)
olive oil
salt & pepper
zest of 2 large lemons
juice of 1 lemon
1 lemon sliced into wedges
4 large garlic cloves -- pressed (4 to 6)
Crushed Red Pepper Flakes
dried thyme
2 tbsp capers

Drizzle about 1 1/2 tbsp of olive oil into a 9x13 inch glass baking dish. Lay tilapia fillets in the pan, and roll around in the oil until they are completely covered. Lay lemon wedges decoratively beside the fish.

In a small bowl, combine zest & juice, garlic & a little bit of olive
oil.

Salt and pepper the tilapia. Divide the garlic/lemon mixture among the 4 fillets and rub into each fillet.

Sprinkle each fillet with a little bit of crushed red pepper (optional) and a pinch of thyme. Rub into fish.

Finally, sprinkle a few capers over all, and drizzle with more olive oil if needed.

cover tightly with plastic wrap etc, and refrigerate. When ready for dinner, Preheat oven to 400 degrees (convection if you have it) and bake fish for 12-15 minutes -do not turn - until fish is flaky and opaque but still juicy. Squeeze roasted lemon wedges over fish just before serving.

I serve with blanched asparagus and mashed potatoes.

Does anyone use the Tilapia loins instead of the filets? They are even more mild.

I take 4 frozen loins, put them on a cookie sheet sprayed with Pam and then I give the loins a quick spray. I sprinkle lemon pepper on the loins and broil them for about 10-15 mintes depending on how close they are to the fire.

For tarter sauce I use light Miracle Whip and sugar free sweet pickle relish and the juice of a lemon.

Very easy and tasty too!
 
One time my friend and I put the tilapia filets in a cast iron pan with a mango salsa, fresh cilantro and I think onion and a little rosemary... we stuck the whole pan on the grill and it came out AmAzing. YUM!!! So, tilapia is pretty forgiving. Give it a go with pretty much any recipe. Another favorite is saute'-ing it with a little butter, salt and pepper, and fresh herbs. After you remove the fish, add a small amount of white wine, garlic, and perhaps chicken stock to make a reduction of the good stuff left in the pan. Drizzle that over the fish and serve with steamed asparagus and a nice risotto. Mmmm, simply gourmet and simply easy. I Love tilapia!!!!
 
We blacken our tilapia......YUM. We first coat each thawed filet with some melted butter (or spray with PAM, although butter works best) then we place directly into a hot (not to hot or it will burn the butter) iron skillet on the side burner of our outside grill. Sprinkle with blackening season (get in the spice isle) Zatarains works well. Leave for approx 2 minutes, flip over and sprinkle the other side, leave for another 2 minutes. WOW This is great!

It SMOKES alot so I wouldn't recommend making it in the house....did that ONCE! It works great on the gas side burner of our grill.
