Her worming schedule is in line with the other babies. MOST OF THE VETS around here know VERY LITTLE about miniature horses.

From what you describe, stress sounds like a good possibility. Weaning can be tough on some babies, and seven weeks isn't that long ago. Just sort of coddling her for a while might be all she needs (she seemed ok before weaning, yes?)
If the diarrhea was associated with cold weather, have you thought about getting her a mini-sized waterproof turnout sheet? Another thought, is there still grazeable grass in their paddock, and is it possible she is sometimes getting too much of it (like if she's run off the hay by other horse(s)) causing the loose stools?
