So we have this huuuggee issue at our farm.. We cant sell duck eggs... Most ppl think they are gross and aren't open to new ideas.. So i suggested selling hatching eggs.. We thought about selling some at an auction for eating/hatching... Any one have ideas because our fridge is stuffed and we need to sell these eggs!
 
Since duck eggs have larger yolks and are richer in fats and oils, they are AMAZING for baking! Add a duck egg instead of a chicken egg in anny recipe, and you'll notice the difference! Gourmet chefs and culinary hobbyists do anything for duck eggs. They are just so much better!

*Duck eggs don't well for cooking alone, as in frying and hard boiling, since they overcook very easily and may turn rubbery. If you'recareful, though, it's definetely worth your time!
 
I know! We have this lady who makes pastries interested in our eggs but its hard because they arent pastuerized... I almost always use duck eggs while baking cakes and other things they make it so much better!
 
What about selling them to artists, they can blow the contents out and use the shells?

What's the scoop about pasteurizing? I mean, doesn't cooking them do the same thing, only more so?
 
We have a local restaurant and bakery interested in us but some sort off health code states you have to have pastuerized eggs.

I like the idea of selling to artists!
 
I think Ohio has that law, too.

In New Jersey it used to be against the law to serve eggs with runny yolks. I don't recall the whole story, but the law was, I think, eventually repealed.

The FDA recently tried to make it illegal to age cheese on wooden boards. It's been done that way for centuries. sigh.
 
Its frustrating i really want to sell these eggs we get about 12-24 eggs a day from our chickens and 5-10 duck eggs a day all eggs are fertile.
 
I was thinking that... We have a variety of breeds (swedish-blue-black, buff orpington, and cayugas) i was thinking of hattching eggs... Idk
