Need knowledge

Seems like my quails are changing sex. Some of them make the noise then the others. I have 11quails 5 eggs in a day and looks like 8 quails made the noise. It does not add up
 
Females will sound like chirping crickets the males the noisy crowing that you are hearing.

Some aggression is normal but if excessive to the point of roosters being feather picked or birds bleeding, you will need to remove the aggressor. If you mean they are being aggressive to the hens..well..that's just how it is. take the hens out if they start losing too many feathers on their heads until she heals. Just be careful because if a bird loses too many feathers or begins bleeding profusely the others will kill it.
 
You can tell by spending some time observing them. Maybe look at some close up pics on this forum to help you get the eye to distinguish male from female. When the males crow they like to stretch their necks upwards and by watching you can see them do this. If you have a bachelors coop you can pull each one as they crow and then you will know what you have. By separating them temporarily/permanently you can choose ratio and quality.
