Need Quick Advice Please! In the midst of butchering right now.

I can't remember exactly what the disease is, but I know that if you cut into the cavity, and fluid pours out, it's a sign of a sick bird. If you're gutting a bird and you see green, it usually means you've broken the gall bladder, and your bird will be covered in bile that won't wash off.
 
Yes, that's synovial fluid in the joints, it's normal, it keeps the joints moving freely. You'll notice it's very slippery. There can also be kind of a puffy-looking-not-quite-ordinary-fat tissue, that's just more of the body's padding and protection for the joint. The older a bird is, (or heavier) the more noticeable these two things are likely to be.

Ascites is the condition of having fluid accumulate in the peritoneal cavity, (abdomen) often associated with liver disease.

The gall bladder is attached to the liver, a tiny dark bladder, and if it's ruptured, it will spill gall onto the meat. The meat can be rinsed and trimmed off, the rest of the bird is still good. It's not toxic, it's just very bitter, and it's dark green-to-green/blue.

There's a thing called green muscle disease, sometimes seen in broilers, where the inner breast muscle is compressed, cutting off circulation, and the muscle can die and turn green.

If you cut open a bird and green fluid or ooze comes out, you probably cut an intestine. If you're sure you didn't, but there's green or yellow or unusual color ooze in the body cavity, I'd thing something was wrong, and not eat that bird.

After a little while, you'll get used to what's normal, and know when something's wrong.
