need some help figuring out this recipe....

Here's the idea I had:

I want to make up some quiche like shepard's pie. I have sausage and eggs and cheese and a roll of pastry dough. I was thinking a breakfast type pie with the pastry on top. Any thoughts on how to do this??
 
So here's what I did. I just did a blend of eggs ( separated whites and whipped them first) cheese, milk, salt and pepper. Blended them into a pie pan (buttered) gave it 20 minutes at 375 then rolled the flaky crust on top for another 10 minutes. Tasty but too bland....
 
I actually make something very much like what you are talking about. I use a can of cresent rolls kept together like a sheet and put on the bottom of a greased 9X13 pan. Then I brown the sausage, drain and take off the heat. In a seperate bowl, I beat 2 eggs and add that to the sausage along with about 2 cups of cheese and mix it all together. Add a little salt and pepper, mix and pour the sausage mixture over the cresent roll bottom. Then, I take a second can of cresent rolls, and again, rolling them out like a sheet, place that on top. I bake it for 30 to 45 min until the crust gets brown at 350. OH, and sometimes, I also add half a package of cooked bacon crumbled into the sausage, egg and cheese mixture. It has a nice a flaky and butter tasting crust and really good.

Leftovers are even good heated in the microwave, but there usually isn't many leftovers when I make this.

Sausage gravy would go really great with this. I would also use biscuit dough for the top, kind of like a full covering of dumplings to go with the gravy. You may want to add some minced onion and/or green pepper to the eggs and maybe a pinch of sage to the sausage gravy. I have not tried anything like this but it sounds tasty. You could also do variations with salsa and cheese with a tortilla crust.
