Needing to know when I can sell poults & how much?

I am raising Heritage (only naturally bred & raised) Royal Palms. I also am cross breeding my royal palms to a couple other pure Heritage breeds. So my flock consists of pure Royals and then crosses.

I have 11 poults currently that are 4 weeks old and I have other hens due anytime. So am needing to know when the best time to sell my poults is? When will the poults start to show their sex (hen or jake) since I am wanting to keep a couple for breeding next year.

Then I am wondering if there is somewhere that I can go to get the current market rate? (I live in Oregon) I am curious to know how much fertile eggs, poults, & ready to butcher turkeys go for. I have been searching for someone around here that has my breed for comparision but so far have not found anything. Any advice would greatly be appreciated.

poults can be sold as day old chicks. around here they usually sell for 5-10 bucks a piece for pure birds at day old and prices go up with age. crosses i wouldnt sell for any more than 5. Eggs are usually sold about 2 bucks a piece or so. pairs of birds here sell 50-60 a pair full grown, some places it can be as high as 100
