I used to keep jap Quails when I was a kid, I would personally go with these purely because of size (Chinese being tiny) I found the hens to be great layers which are saleable to restaurants (I'm a former chef also!)
You would have to investigate your local area to see if you are able to sell them as meat to restaurants in your area and also someone to process them.
They don't have a bad character but are not on a par to chooks.
