I’ve been reading and it seems most people set their incubators at 37.5....and then increase humidity as the hatch date nears.

Do I keep the incubator at a consistent temperature the whole time, or do I raise the temperature as we go along? What temperature do you keep your incubators at and what humidity level through the weeks?

I’m getting really confused trying to figure out temperature/humidity over the 21 days.

Try to have the temp at 99.5 Fahrenheit the whole time. Some people lower it at lockdown a bit, but it's unnecessary. I keep humidity at 35-40% for chickens until lockdown, and then I up it to 65-70%. There is no right humidity though, it's different for everyone. The big indicator os to watch the air cells. Trace them on day 7, 14, and 18. If they look a bit small compared to charts just lower the humidity a bit, and if they look to big just up it a little. I don't oay much attention to humidity. My logic is, as long as it fluctuates a bit and doesn't stay super low or super high for prolonged periods of time, they're fine.
 
Egg shells vary in their porosity... I kept my humidity at 30-40% and yet my eggs were losing too much moisture, and my air cells were too big after the first week, so I upped the humidity to 40-50%. Candling again tonight, so we'll see. It's best if you can check how they're doing rather than relying on a number, but numbers do provide some base guideline.
 
This makes me feel so much less stressed. Thanks!! Ameraucana and olive egger eggs going in this week. We shall see!
 
Well, call me silly.. but I'm following the Manufacturer's recommendations :p that came with my incubator: 50-60% H, and 100 F temp. Temp fluctuates a half a degree up or down but has been very consistent. Humidity I had to play with a bit throughout by removing a plug, laying it over the hole and scooting it around accordingly.
