Those are some wonderful breeds! Just a little warning, though; a lot of hatcheries and farm stores will sell a mixed breed, known as Easter Egger, claiming they are Ameraucanas. Ameraucanas are much less popular than Easter Eggers, but both are wonderful breeds. Easter Egger chicks will tend to have a chipmunk pattern on them.

I'd say to give them at least a couple days until you hold them for a while, so they can adjust to their new home. After that, I used to hold mine for a couple minutes and talk gently to them so they got used to me.
