Hi Deb, welcome to BYC!
We are struggling with the heat here in Texas, as well. My climate is humid, and I've found that my flock loves to scratch in mud.
There are some good articles on how to deal with bullies. I rehomed a whole family of five bully hens together a while back. I felt a little guilty, but my coop is much calmer now, and they went to a nice family. Good luck with yours.
