So my girls are getting my old workshop as their new chicken palace. In their old coop they all (they are still in it) they all like to lay their eggs in one spot in the nesting boxes on the south facing wall. Should I keep new nesting boxes on the south facing wall in new coop or can I put them anywhere I want?

I have two sets of nest boxes. They prefer to use the set that is in a dark area of the coop (south side of coop). Whichever side you choose, try to place them away from sunlight coming in a coop window. Even a curtain or side panel to block some light would be ideal.

South boxes to the right past the panel to block light. They rarely use the north boxes to the left.

Put them where they will work best for you or the layout, the chooks will adjust.
