I think with such a nice size property, you should go with a fixed coop and run. As for breeds, I think everyone should start with a variety. A colorful egg basket is exciting to see, as is a variety of chicken colors. We can stereotype breeds, but you might have a different experience.
If you have time and energy, make an additional mobile coop. It can be used for sick birds, broodies (if you decide to separate them) new birds/quarantine, and it will be handy if you need the flock close to the house for a variety of reasons.
