Should I just start out with all bantams or all standards and go from there? Thanks!

Bantams are a medium size bird. I suggest when you choose your flock, you should go by size. Small/med/large (no mixed sizes). Unless there is a lot of get away space. Size matters within a pecking order. Welcome to the "Bird is the Word" site!
