I've banded them (Elasticate) also have used a Emasticator and a pocket knife. Banding is easiest, less prone to infection. No vets I have ever known used any anesthesia or pain killers for any of those methods. I've also castrated pigs, with a pocket knife. On old 3 blade pocket knives, the drop point blade was used for castration.
It's best to castrate at a young age before 8 weeks of age, after that it becomes more complicated.

We've never raised cattle but have raised goats and banded the males. DH did it as soon as possible and no anesthesia was required, nor did it seem to affect their personalities (they were still affectionate, ornery little things).
