There are a lot of experienced quail keepers that are more than willing to offer advice for everything quail related.

There are a few of us that actually have YouTube videos made on how we butcher our quail.
The easiest way is to just cut their head off.
Then you have to decide if you want to pluck the bird or just rip the skin off

I prefer just ripping the skin off much easier and once you get the hang of it it doesn't take very long to butcher a quail at all.
A minute or so.
