Do your chickens have access to these weeds you don't want? They may just eat them. If not, we use a weed killer, I think it's Scotts. It's a spray that we mix up and spray down the hill where the nettles are spreading too much. The chickens wouldn't eat them anyway but it says it's pet safe once it's dried. Just look at the back of the bottle or product you're considering using as I am sure most are that way.
We've done this dozens of times without a problem.
