Hello and welcome to BYC! chickens are normally fed chick grain with around 20% protein (it varies based on the brand) you can get medicated or non medicated. Once they begin laying, or around 18-20 weeks, you can switch to layer pellets at normally about 16% protein! The reason we don't give chicks layer pellet is because it has too much calcium (which they need to lay eggs) for the chick, and could harm a young chick's liver.
Turkeys are typically fed All Flock, which i believe is like layer pellet but a higher protein and slightly lower calcium, so that ducks, turkeys, chickens, hens etc. can all eat it. I believe it comes in crumble and pellet. We feed our turkeys layer pellet at a higher protein, so that is another option!
