I've been doing a lot of research on how to best keep these and also on the butchering process.

My question is, do you wrap them in something like a vacuum sealer before resting in the fridge or do you only do that once ready to freeze?
 
I use shrink bags to package them. This forum has a lot of information about that. I rest them already packaged in the bags but some people do it differently.
