new to gardening

I'm just dipping my toes into gardening with some mint and cilantro. I plan on keeping them in the pot in the patio. I've only had the plants for about a week and they are already turning brown around the roots. I water them 3 times a day (it's crazy hot where we live). What am I doing wrong?
 
I don't know much about herbs but I do know not to water plants while the sun is beating down on them. We always water one time in the evening when the sun goes down to prevent the water burning the leaves. Also over watering can be a bad thing. Maybe try partial shade for the plants?
