New to qauil and birds in general

Hi i am a new father and new to birds, cause I wanted my daughter to grow up knowing where food comes from. I grew up on a 35 cow dairy farm so I do have experience raising animals to eat. After research and wife telling me she had a pet rabbit and couldnt eat them i decided on quail we have 18 to start with. Live in centeral wi. I feed 30 percent protein turkey starter n a little bird seed plus have ouster shell out for em and a sand bath. I have had em for 1 week. Lady i got em from says 3 week old but i was supposed to get 25 birds too so i dont trust her much. Believe 12 hens and 6 roosters. Wonder when to expect eggs? Also only 70s and shaded here and some like to lay on there side is this normal behavior? Plus anything people can tell me
